Bell PepperHeat a pan over high heat. In the meantime, add salt and pepper to the chicken and cut into strips.
Once heated, add half the oil and the chicken.
Cook for about 4-5 minutes or until browned.
Chop the onion and garlic. Cut the bell pepper into strips. Add the remaining oil in a pot and stir-fry with the chicken for 5 minutes.
You can use any bell pepper you like: Red, yellow and/or green.
Cook for 5-7 minutes until the vegetables are soft. Add salt and pepper to taste.
Remove from heat, sprinkle with chopped cilantro and serve.
