Olive OilPeel and dice the potato. Place the potato in a pot of boiling water and boil for 10-12 minutes or until tender.
Meanwhile, dice the bell pepper and slice the onion into thin strips.
Preheat a pan over medium heat and add half of the oil.
Add the vegetables with a pinch of salt and stir-fry for about 5 minutes until the onion turns translucent.
Simultaneously, clean the fish and cut into pieces.
Add to the pan and sauté together with the vegetables. Season with salt and pepper.
Cook for about 5-6 minutes, stirring from time to time and remove when ready.
To make the mashed potatoes, place the boiled potato in a bowl and mash to the desired consistency. If necessary, add a little water.
Add the remaining olive oil and season to taste with salt and pepper. Optional: Add a pinch of oregano or rosemary.
Serve the sautéed fish with mashed potatoes.
