Boil water in a pot over high heat. In the meantime, peel and cut the potato into pieces.
Once boiling, add the potato. Let boil for 8-10 minutes until soft. Drain.
At the same time, clean the fish and season with salt and pepper to taste, half the lemon juice and parsley.
Heat the grill over high heat. Once heated, pour half the oil and add the fish.
Cook each side for 3-4 minutes. Once flipped, season with chopped parsley. Remove once cooked as desired.
In the meantime peel and cut the beets.
Season the potato and beets with the remaining oil, lemon juice and salt and pepper to taste.
Optional: add oregano or chopped parsley.
Serve the parsley fish with potato and beets on a plate.
