Heat half the oil in a pot o big pan over high heat. In the meantime, cut the chicken into bites and add salt and pepper to taste.
Once heated, add the chicken and brown all its sides. This will take 3-4 minutes.
Once brown, lower the heat to medium. Add a bit of water, cover and steam cook for 6-7 minutes
Then uncover and let cook for some more minutes to evaporate the water. Remove from heat.
At the same time, separate the broccoli into small florets and put in a pot with boiling water.
Let boil for 3-4 minutes, until tender. Remove, drain and set aside.
Serve the stir-fried chicken with rice, broccoli and peanut. Season the broccoli with the remaining oil, salt and pepper to taste.
