Add rolled oats to a blender until you have a powdery flour. You can also use quick oats or oat flour.
Preheat 1/3 of the oil in a pan over medium-high heat. Meanwhile, chop the onion and bell pepper.
Once heated, add the chopped vegetables with a pinch of salt to the pan and stir-fry for 3-5 minutes over medium heat.
When the onion takes on a transparent color, add chopped parsley and set aside.
Place the cooked lentils in a bowl and mash until obtain a paste. You can also use a immersion blender.
Add the stir-fry together with the oats and season with salt and pepper to taste. You can add garlic powder, curry, paprika, etc.
Once done, shape into patties and cook in a preheated pan with another 1/3 of oil for 2-4 minutes per side. Remove.
Next, place a pot with water and pinch of salt over high heat. Cut off the ends of the green beans.
Once boiling, add the green beans and boil for approximately 6 minutes. Then, remove and drain.
Cut the tomato together with the lettuce for the salad and mix with the green beans. If you wish, you can add grated carrot.
Season the vegetables with the rest of oil, lemon juice, salt and pepper to taste. Serve with the patties.
