OilPreheat the oven (or an air fryer) to 356 °F (180 °C)
Wash the eggplant and cut lengthways, as you can see in the image.
Place on a baking pan with the flesh looking up and slightly cut with a knife.
Bake for about 20 minutes until the flesh is soft.
At the same time, chop the onion and garlic.
Heat a pan over medium-high heat and add the oil.
Add the onion with the garlic and a pinch of salt. Stir-fry for 5 minutes over medium heat or until the onion is transparent.
Then add the ground beef and cook until it has a brownish color.
Remove the eggplant from the oven, scoop out the flesh and add it to the filling mixture. Add salt and pepper to taste.
Cook for 2 more minutes over medium heat.
Fill the eggplants with the filling and top with cheese.
Bake in the oven for 5 minutes, just long enough for the cheese to melt.
Remove from the oven and serve hot.
