Boil water in a pot over high heat. In the meantime, peel and cut the potato into pieces.
Once boiling, add the potato. Let boil for 8-10 minutes until soft. Drain.
At the same time, heat the grill over high heat and add salt and pepper to the pork.
Once heated, pour half the oil and add the pork. Cook each side for 4-6 minutes over medium heat.
Then lower the heat, cover and continue cooking for 5-10 more minutes or until well cooked.
Once well cooked, you can add the potatoes with the remaining oil and brown in the grill with the pork.
In the meantime, peel the beets and grate for the salad. Season with lemon juice and salt to taste.
You can also slice it. Add parsley or oregano.
