OilPlace a pot with water over high heat. In the meantime, peel and dice the potato.
Once boiling, add the potato and boil for 8-10 minutes until soft but not falling apart.
Meanwhile, crack the eggs in a bowl and add salt and pepper to taste. Beat until it's well integrated.
Place a pan over medium heat. Once heated, pour half of the oil, spread and add the eggs.
Cover and cook over medium-low heat for about 3-4 minutes until the omelet set. Meanwhile, curt the ham and cheese in small pieces.
Carefully flip the omelet using a spatula, lower the heat and add the cheese together with the ham. Fold in half.
Cover and cook for 2-3 more minutes until the cheese is gratinated. Set aside.
Separately, pour the remaining oil in the pan over high heat. Once heates, add the potatoes.
Stir-fry for 3-4 minutes and brown on all sides. Add salt and pepper to taste and, if you wish, you can add garlic powder.
Serve the omelet with chopped potatoes on a plate.
