OilPeel and dice the potato. Put in a pot with boiling water and boil for 10-12 minutes or until soft.
At the same time, shell the corn and put the grains in a pot with boiling water and a pinch of salt. Boil for 6 minutes.
In the meantime, peel and dice the carrot.
After 6 minutes, add the carrot and peas to the pot with the corn. Boil for 6 more minutes, remove and drain.
At the same time, mix half the oil with the orange juice, chopped garlic, salt and pepper to taste. Optional: Add orange zest.
Add the pork and let marinate for some minutes. The longer you marinate, the better will be the flavor.
Heat a pan over high heat. Once heated, add the marinated pork.
Lower the heat to medium and cook each side for 4-6 minutes. If you want, you can cover once flipped.
For the mashed potatoes, place the boiled potato in a bowl and mash until obtaining the desired texture.
Mix with the butter and milk to make it creamier. Add salt and pepper.
Serve the orange pork with mashed potatoes and cooked salad. Season the latter with the remaining oil.
