Place a pan over medium heat. While heating, cut the chicken into bite-size pieces and season with salt and pepper.
Once heated, pour half of the oil, spread and add the chicken. Cook for 4 minutes, stirring occasionally.
Meanwhile, chop the onion with the garlic and dice the bell pepper.
Once the chicken is browned, lower the heat to medium and add the rest of the oil.
Add the onion, garlic and bell pepper. Season with salt and pepper and stir-fry together with the chicken breast for 5-7 minutes.
Stir occasionally and add a little liquid if necessary to prevent it from drying out.
Optionally, you can add some snow peas and stir-fry together.
On a plate serve the rice with the stir-fried chicken and bell pepper. You can add chopped parsley if desired.
