Boil water in a pot over high heat. In the meantime, wash and slice the potato.
Once boiling, add the potato. Boil for 8-10 minutes until soft.

Cook each side for 3-4 minutes. Remove once cooked as desired.
Once flipped and browned, add the remaining oil and the cooked potatoes.
Let cook each side for 1-2 minutes to brown. Then remove from heat.
In the meantime, peel and slice the beets. Then chop the onion and cut the lettuce leaves.
Season the beet salad with lemon juice and salt and pepper to taste.
