You can also boil the artichokes in a pot with water and a pinch of salt for 6 minutes.
Heat 1/3 of the oil in a pan over high heat. In the meantime, add salt and pepper to taste to the pork and slice.
Once heated, add the pork and brown both sides for 4 minutes over medium heat.
Cover, lower the heat to medium-low and let cook for 10 minutes until well cooked.
Cut the lettuce and chop the tomato.
Once ready, mix all the ingredients.
Season with the remaining oil and vinegar. You can also season with lemon juice.
Add salt and pepper to taste and, if you want, sprinkle some chopped parsley or oregano. Serve.
